Are you ever wondering how to deal with those 5$ frozen oysters? Here is a perfect way to cook it!

  • 250 g frozen oysters(Must defrost before cooking)
  • 50 g of potato starch
  • Fish sauce
  • Soy sauce
  • White pepper
  • One stalk of spring onion
  • One stalk of coriander(Optional)
  • one duck egg(Can be swaped with chicken egg if not available)
  • 2 table spoons of lard(Can be swapped with neutral oil if not available)
  • Preparation: First, carefully clean the oysters by adding a table spoon of starch of your choice to the oysters and rinse it multiple times until the water is relatively clear. Then drain the oysters and put it with starch in a large bowl. Chop up the coridander and spring onions and put them into the bowl. Next, season it with some fish sauce(very important), soy sauce, and white pepper. Then mix(add water if needed). Now beat up the egg in a separate bowl and season the egg with fish sauce.

    Cooking: First, heat the pan on high and melt the lard in the pan(replace with neutral oil if you can't use lard). Then add the batter to the pan. Flip the omelette when you see the crust is forming. Then pour the egg on the side of the pancake. Remove it from the pan when the egg is crispy and sprinkle some fish sauce onto the pancake and serve.
